What does "this week" mean here?

The next seven days from now, not a calendar week. A launch drops off the list three hours after its time. Launches that have only an earliest date, with no set time, are listed under that date. Some launches are listed only as a month; those don't appear here until they get a date.

Where can I check a launch time myself?

On the launch company's own website. The sources below link to launch pages from SpaceX, NASA, ISRO's launch centre at Sriharikota, Rocket Lab and Arianespace. When a company has announced a time, it is the one to trust. Times often move, sometimes on the day itself.
